North American grape growers have attempted for many years to achieve
a balance between the elegance of European (Vitis Vinifera)
vines and the straightforward sturdiness of their local North
American relatives. This is accomplished by crossbreeding the
two types of vines. These crossings are called hybrids.
Some have been successful, and have gone on to develop loyal fans.
Many thousands more have ended up on compost piles.
There are some wineries (shame!) who will not work
with Baco. We at Birchwood feel that the there is room on the
table for ALL the grapes, and we are proud of the success we have
had with Baco Noir. Ours shows the dark purple red color and
attractive plum, smoke and cigar box aromas which typify good Baco.
Our 2000 Baco won best Hybrid in Canada at the 2002
Canada Wine Awards...
We like Baco with grilled red meats, especially
lamb, where its full flavour and rich smoky character really
shine.
